There are a couple reasons for this. The first is that when sending them all as a CC field, a single invalid email address caused the message to not get sent at all. The second is that a large number of people requested that we change the behavior to be more like a BCC.
If you want to see the email addresses, you can edit the email response item and list the email addresses in the "Body" textbox of the item editor. Text entered here will appear at the top of the emailed message. This will let you see which email addresses the message was sent to.
